[#0000ff][size 1]Hey guys, I don't really thing there are any challenges that need to be met or issues to be resolved. Most of us will agree that the best fish is that prepared fresh beside the water it just came out of. After that, there are a whole lot of factors that can make a difference.[/size][/#0000ff]
[#0000ff][size 1]I freeze fish and keep it in the freezer for quite a while before cooking sometimes too. And, if I have frozen it in water or vacuum sealed it, to prevent freezer burn, it usually turns out pretty good.[/size][/#0000ff]
[#0000ff][size 1]What I propose, rather than a head-to-head cookoff is to have some kind of big get-together where we all have a chance to prepare our favorite recipes and bring them written down to exchange with the other fish chefs. Of course, that will also mean that we gotta have a fishing trip where we can count on gettin' the fixin's too. Anybody bringing in fish wrapped in a store package will be automatically disqualified.[/size][/#0000ff]
