Whatever happens to be ready in the garden at the time. Usually Jalapenos, of New Mexico Green chilies, but last year I grew some Salsa peppers and they were great, Anehimes are good ones too. I usually don't like the all heat and no flavor peppers, like habineroes.
Every year I go down to New Mexico and bring back a couple sacks of peppers, last year I brought back 4 40lb bags of mild peppers, this year I'll bring back 2 mild, 1 medium, and 1 hot! Should make some smokin salsa.
