Pitch?

I have a 15hp 4 stroke evinrude with the factory prop that I'd like to replace. Can anyone explain the different types of pitch and what they do performance wise? The motors trolling speed is perfect put lacks a bit on the top end. I can get on a plane, but just barely with two people. Should I stick with the same pitch as the original prop or should I change pitch? Thanks for any help..
