Add seasonings to flour or breadcrumbs such as salt, pepper, ms dash or red pepper.<br><br>Dip filets in mixture of eggs and beer (brand presently consuming), then dip fillets into breadcrumbs or flour. Dip again into batter, then again into powdered mixture.<br><br>Toss dipped fillets in skillet with onions and melted butter. The double dip will help keep some of the breading on, and keep in moisture.<br><br>Key is to use same beer as will be consumed before, during and after cooking...<br><br>Any fillets left, mail them to me..<br><br>[laugh]
