 today, and curious how well my 18 deep V will fare and what should I fish for and how?

Nice boat Scott. Hopefully Shunkedagain will see this or one of the other guys that live up in Cache valley, because they can give you a better answer than me. My limited experience in fishing Cutler says you will be fine up there in your boat but in any lake you need to be careful on your first trip out until you become familiar with the area and the shallow spots. As far as what to fish for there, they have a wide variety of fish in there, crappie, cats, walleye, bluegill, of course carp, and I think trout and perch, hopefully the other guys can give you a better list. When we fished there we bait fished but I'm pretty sure you could bottom bounce worm harnesses, once you learn the lake. Trolling, not so sure about that but I'm sure Jeff can give you some better info. Good luck Scott.
