Baked Fish with Mushrooms

Prep time: 15 minutes  Bake time: 12 minutes  Oven Temp: 450⁰ F

1 pound fresh or frozen fish fillets or steaks, 1/2 to 3/4 inch thick
2 tablespoons margarine or butter
1 cup sliced fresh mushrooms
1/2 cup sliced green onions (4)
1/4 teaspoon dried thyme
Crushed Paprika

1. Thaw fish if frozen. Rinse fish and pat dry with paper towels. Cut into 4 serving-size pieces, if necessary. Arrange fish in a 2-quart rectangular baking dish, turning under thin edges. Sprinkle with salt.

2. In a small saucepan melt margarine; add mushrooms, onions, and thyme. Cook over medium heat till tender. Spoon mushroom mixture over fish; sprinkle with paprika. Bake, covered, in a 450⁰ F oven for 12 to 18 minutes or till fish flakes  easily with a fork. Makes 4 servings.

Nutrition Facts per serving: 143 cal., 7 g total fat (l g sat. fat), 45 mg chol., 131 mg sodium, 1 g carbo , 0 g fiber, 19 g pro.
Daily Values: 10% vit A, 6% vit. C, 1% calcium, 5% iron
