I strongly agree with SA that you want to leave the point of the hook exposed.
One other thing you have to be careful of, if you are using WB that is not skinned, is the scales. I have used whites both skinned and not skinned and I prefer the skin on so the smaller fish can't steal it completely.
Almost every time I put a hook through a chunk of WB, I end up with a scale impaled on the point of the hook. They are tough scales, so you just back them off the point.
If you don't remove the scale you almost never get enough penetration to land the fish.
