We don't have to "winterize" like the northern states where the water gets hard and boat laid up for 6 months, since we use our boats all winter long.
Outboard, just lower the OB when the boat is on the trailer to drain it.
I/O (I have one) drain the block and manifolds(s), lower the drive when the boat is on the trailer to drain the drive. If you have a P/S cooler, drain it, not a bad idea to pull the lower hose off the water pump too. Close and reconnect everything so it's ready for the next trip. I do this at the ramp, after pulling the boat, up until March.
It doesn't get cold enough here to freeze an engine, often, but I know of people in the Vegas area who have had engine freeze damage on an I/O...
