Perch are very tasty, like bass or walleye but they never have a mercury advisory due to the fact that they don't grow large on a diet of other fish with mercury in them. Plus if they're too small you just save them for bait. If you scale and fillet a smallish perch but leave the skin on you can cut their meat into strips with the skin still attached and substitute them for a worm in a worm harness.
Really my response was just an excuse for using my "Orem Municipal Reservoir" and "porcelain fish ladder" jokes. I've been itching to trot those out for a while.
