When I return home from work this evening I will fillet them with an electric knife. Then skin the fillets, then cut out the rib cages. This batch of fish should yield about 2 pounds of finished fillets. I package the boneless fillets in bags with about 25-30 fillets per bag. Then I pull a bag out when I want to have a fish fry. If you haven't had batter fried perch you are missing out.
