I have yet to actually fish Louisiana but as far as saltwater species:
Red Snapper
Gag Grouper Season
Bluefin Tuna
Greater Amberjack
Sharks
Gray Triggerfish

My uncle and I goto the gulf near Grand Isle and catch Reds.
