I grew up fishing mostly freshwater, but I want to start giving saltwater a try. Can anyone recommend the best target species off the Texas/Louisiana coast?

I made a couple changes to your post. First, since you're on the saltwater forum, and am asking a question about saltwater fishing, I changed your title from "freshwater" to "saltwater."
The only other change I made was deleting the link to your website, as you are not allowed to post links to other forum specific websites.
On to your question. I know that, one of the best inshore fisheries for redfish and trout is in that area. I would start there. They don't require any type of special equipment or big, expensive boat, and the tactics are easily learned. They put up a good fight, especially the redfish.
