Yellowtail Salad Pita Pockets - tubeN2 - 12-30-2006
1/2 lb smoked Yellowtail fillet
1 cup chopped cucumber
1/4 cup part-skim ricotta cheese
2 tablespoons reduced-fat mayonnaise
2 tablespoons red wine vinegar
2 green onions, chopped
1 tablespoon sweet pickle relish
2 cloves garlic, finely chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup alfalfa sprouts
2 pita breads, halved
Combine all ingredients except sprouts and bread. Fill bread with sprouts and Yellowtail mixture.
