Clams in Sherry Sauce - tubeN2 - 02-09-2005

2 tb Olive oil
1 Medium onion,finely chopped
1/2 c 2 oz.cubed,cured,ham,cut
From 1/3" slice
2 tb Semisweet sherry ( oloroso )
Dozen very small clams

Heat the oil in a skillet.Saute onion for a minute in oil,then,cover and cook very slowly about 15 minutes,until onion is tender but not browned.Stir in ham,then add sherry and clams.Turn up heat to medium,cover and cook,removing clams as they open.Return clams to sauce,making sure that clam meat is covered by sauce.Makes 3 to 4 appetizer servings.....
