Lancaster Roast Duckling - tubeN2 - 12-02-2004 One 6 pound duckling Salt and Pepper to taste A pinch of powdered garlic 2 tart green apples, peeled, cored, and sliced 6 cups of sauerkraut, drained 1 teaspoon of caraway seeds 1 cup of water 3 tablespoons of brown sugar 1 teaspoon of salt 1/4 teaspoon of pepper Preheat your oven to 350ºF. Prick duckling to allow fat to drain, season cavity with salt, pepper, and garlic. Bake uncovered in a large baking dish for 45 minutes, turning occasionally to brown evenly. Pour off fat. Combine the remaining ingredients and arrange over duckling. Cover and bake for 2 hours, stirring occasionally, until duckling is tender. Remove from oven and serve. Serves 6 [signature] |
