GARLIC AND BASIL MARINATED OAK GRILLED GROUPER - tubeN2 - 10-12-2004

INGREDIENTS:

1 1/2 lb. fresh grouper fillets
1/2 recipe of Garlic and Basil Marinade
1 cup WOODBRIDGE VINTAGE CHIPS

PROCEDURE:

Prepare the marinade. Arrange the cleaned fish in a nonreactive shallow container,
or a clean zip-lock plastic food bag. Pour the marinade over the fish. Cover,
refrigerate and marinate for 30-40 minutes. Prepare the grill.
Remove the fish from the marinade, discarding marinade. Place the fish in a lightly
oiled grilling basket.

Add the smoking chips to the fire. If the fire flares up mist the chips with water.
When the chips begin to smoke place the grilling basket on the cooking grid.

Cover-cook, turning once, over direct medium heat for 6-8 minutes per side, or until
finished.
