[ul][li]1 large red onion, peeled and finely sliced [li]2-3/4 Tbs. lime juice [li]1 Tbs. plus 1 tsp. olive oil [li]1 tsp. brown sugar [li]1 Tbs. plus 1 tsp. fresh coriander, chopped [li]1 tomato, chopped [li]1 jalapeño chilli, finely chopped[/li][/ul]
Combine all ingredients in a bowl. Mix well. Season to taste. Cover and set aside at room temperature 10 minutes before serving.
