Maria's Hot and Sweet Mango Salsa - tubeN2 - 10-06-2004

[ul][li]3/4 large orange, peeled, white pith removed and cut into 1/4 inch pieces [li]3/4 large ripe mango, peeled, pitted, and cut into 1/4 inch pieces [li]2 Tbs. plus 2 tsp. sweetened flaked coconut [li]2 Tbs. plus 2 tsp. red onion, chopped [li]2 Tbs. plus 2 tsp. fresh cilantro or parsley, chopped [li]1 Tbs. plus 1 tsp. jalapeƱo pepper, seeded and minced (wear rubber gloves) [li]1 Tbs. plus 1 tsp. fresh lime juice [li]1/8 tsp. cayenne (optional) [li]1/8 tsp. sugar[/li][/ul]
Combine all ingredients and salt and pepper to taste in a nonreactive bowl. Cover and refrigerate up to 12 hours.
