Avocado and Grapefruit Salad - tubeN2 - 09-24-2004
Prep: 15 min. [ul] [li]2 cups grapefruit segments [li]1 avocado, halved lengthwise, pitted, peeled and cut into 1/4 inch slices [li]1 red onion, thinly sliced [li]1/8 tsp. salt optional [li]1/4 tsp. pepper [li]3 Tbs. lemon juice [li]6 ounces garden salad [li]8 small black olives, sliced [li]2 Tbs. tomato juice [li]1 tsp. ground cumin [li]1 small clove garlic, minced [li]2 Tbs. olive oil [li]1/4 cup cilantro or parsley, chopped[/li][/ul]
Combine first 5 ingredients and 2 Tbs. lemon juice in a mixing bowl. Arrange lettuce on individual salad plates. Top with avocado grapefruit salad and sprinkle with olives. Combine remaining ingredients, except cilantro, in a jar with a tight-fitting lid. Shake vigorously. Add cilantro and shake again. Pour dressing over salad and toss.
