Prep: 15 min. [ul] [li]3/4 cucumber, diced [li]3/4 green bell pepper, cored, seeded and diced [li]1 ounce green olives, pitted and chopped [li]2 tsp. coriander, chopped [li]1 Tbs. plus 1 tsp. mint, chopped [li]1-1/4 tsp. wine vinegar [li]1 Tbs. plus 1 tsp. olive oil[/li][/ul]
Combine all ingredients in a bowl. Season with salt and pepper to taste. Mix thoroughly.
